This 4 tier buttercream wedding cake was delivered to The Madison Hotel today. It has two tiers of white cake filled with peanut butter buttercream and two tiers of white cake filled with raspberry chambord. The bride brought me a picture of a cake she found on the Knot originally created by The Cake Girls in Chicago. This cake is my adaptation using the color scheme of the wedding reception. The cake is iced with vanilla buttercream, and decorated with fondant strips and gum-paste butterflies.

When my nephew was born 14 months ago…I warned my sister-in-law and brother that as soon as Brian could walk, he was going to learn his way around the kitchen. “If he can walk, he can whisk!”And since Brian’s now vertically mobile, I thought it the perfect time for Icing 101. Note the technique Chef Brian uses here:

And here, Chef Brian is trying a new way of squaring off a cake…it’s called ‘gouging’ ! Nothing a little more buttercream can’t fix! I hope the child labor laws don’t apply here…

Speaking of Interns, with our new move to Denville, NJ we are looking for cake decorating Interns. This is a great opportunity for those interested in a career in cake design.

This ‘Tara & Co.’ gift box cake was created for a Tiffany blue bridal shower for a bride named….can you guess? TARA!

Branding your logo on our cookies makes for a great gift to clients. We created several logo cookies for the Ballantine Corporation which they sent out to their valued clients.

We created several butterfly, tulip, and daisy cookies for valued clients of Ballantine Corporation, a direct mail marketing services company in Wayne, NJ. Each order was packed in one of our signature boxes.

This chocolate chip cake with chocolate fudge filling is the sister version of a previous Holy Communion cross cake. I used fondant circles to create the pink mosaic cross.

This particular wedding had a special place in my heart - as I had a little cake journey with this family! I was first approached by the mother of the bride last year to create a cupcake stand for her daughter’s engagement party. The cupcakes were very successful - and many customers have since asked for similar stands to the one I built for that engagement party.
Then I created a pink and green shopping bag cake for the bride’s shower. And finally…the wedding cake. I will feel a bit of post-wedding depression after this one ….since I’ve felt a part of the process and have grown fond of the client! Maybe a baby shower will be in the future!
This wedding cake was covered in ivory fondant and decorated with chocolate brown and pale pink sugar bands. Hand-made sugarpaste peonies and orchids adorn the top of the cake, and pale pink swiss dots complete the design. The cake flavors are alternating chocolate fudge cake filled with peanut butter buttercream and vanilla cake filled and raspberry chambord buttercream.

This red carpet cake - was rolled out just for Annabella’s first birthday! The chocolate chip cake with vanilla buttercream featured sugarpaste red velvet ropes, and a glittery star featuring “Annabella”!

This picture was taken by Jody Gianni, the birthday girl’s mother - who as you can tell from the photo is an accomplished photographer… we’re not even going to put our photos of the cake next to hers….it would just be too pathetic :).
