Applying fondant takes a lot of practice.  We do not freeze our cakes.  Once the fondant is applied we store the cakes in our walk-in refrigerator.   We use Satin Ice fondant - they have some good videos on  your site for more information - http://www.rolledfondant.com/how.htm</description>

The sides of the cakes and the top sides are so imaculate and neat. There is not a fault in your fondant, it  looks computerised!?
