Bat Mitzvah Cake
Posted to All Pastries, Celebration Cakes on Saturday, June 3rd, 2006.This Bat Mitzvah cake was for a client at the Park Avenue Club. It was chocolate cake with vanilla custard, fresh strawberries and chocolate rolled fondant. The pink decorations are made out of fondant and royal icing.

Hello! Wow, your cakes are gorgeous!!!!!!!!!!! You have truely inspired me!! I was wondering if you could help me out with a problem I am having……I have always made a vanilla cake with strawberries and cream filling. But, a girlfriend of mine asked me to make the same cake with Fondant. As the cake needs to be in the fridge and fondant should not be placed in the fridge, can you give me advice on how to manage such a cake. Is it possible to make the combination???

Thanks for your comment Alessandra. Yes, fondant can be refrigerated. I would fill the cake with strawberries & cream and ice it on the outside with a layer of buttercream. For the last step, roll the fondant on top of it.
